Brown-eyed Susan Cookies

I like this recipe because it’s easy and really delicious: it melts in your mouth. And, it’s made out of practically nothing. The cookie itself is rather bland, and the cocoa frosting won’t raise your eyebrows. But put them together . . . and yum. So it’s SFN all the way.

Brown-eyed Susans

1 cup margarine, or half butter and margarine
3 tablespoons sugar
1 teaspoon vanilla extract
2 cups flour
1/2 teaspoon salt

Cream shortening, and then mix in the rest of ingredients. Roll into small balls. Place on lightly greased cookie sheet and flatten slightly. Bake  at 400 degrees for 10 to 12 minutes. The cookie bottoms should be golden brown.


1 cup powdered sugar
2 tablespoons cocoa
2-3 tablespoons hot water
1/2 teaspoon vanilla

Stir until smooth, and frost cookies.
